  • 1 bell pepper, thinly sliced

  • 1 tsp chili powder

  • Guacamole, salsa, and sour cream for serving


Instructions:

  1. Place a tortilla on a flat surface and sprinkle half with cheese.

  2. Top with black beans, bell pepper, corn, and sprinkle with cumin and chili powder.

Instructions:

1. Heat the Oil: In a large fry pan, heat the olive oil over medium-high heat.

2. Cook the Chicken: Season the chicken with salt and pepper. Add the chicken to the fry pan and cook for about 6-8 minutes on each side or until fully cooked and golden brown. Remove the chicken from the pan and set aside.

3. Sauté the Vegetables: In the same pan, add the diced onion and garlic. Sauté for 2-3 minutes until the onion becomes translucent. Add the capsicum, zucchini, and cherry tomatoes. Cook for another 5 minutes until the vegetables are tender.

4. Add the Broth and Seasonings: Pour in the chicken broth and stir in the dried oregano and basil (or herb of choice). Bring to a simmer.

5. Return the Chicken: Place the chicken back into the frypan, with the vegetables. Reduce the heat to low, cover and let it simmer for about 10 minutes, allowing the flavours to meld and the chicken to absorb the broth.
